Most kefir is either sharp and sour, or mild because something has been left out. In Germany, “kefir mild” may be made with cultures derived from kefir grains instead of the grains themselves, and it does not have to contain any yeasts.
qefyr goes the other way: the whole living grain, bacteria and yeasts together, and still smooth, creamy and gently sweet and sour.
The secret is balance. Four things decide whether kefir turns out mild or sour. Our method keeps all four in balance, with us and at your home.
